Matteo Ambrosini, Szwajcaria

Matteo Ambrosini has a deep passion for mountain agriculture. By recovering several small stables scattered along the valley floor, he managed to create a sort of widespread farm with dairy cows and goats.

He also built new stable and dairy, equipped with Plevnik devices: Cheese kettle SKH with elevating device and controller MC 500 and Draining cheese table SOM. Elevating device makes his work easier to empty and clean a cheese kettle. He likes to take care of the beautiful landscape and produce local and quality foods. Matteo is faithful to tradition and produces the typical cheeses with cow and goat milk (alpine cheese, soft cheese, büscion and mixed robiole cheese and only cow’s milk and mascarpa).
