Tradície Kysúc – Slovakia

Tradície Kysúc s.r.o. – Production of dairy products from sheep’s milk. 

They buy all the milk for processing from the Veľká Rača Cooperative. Originally, the cooperative processed sheep’s milk in several places (traditional mountain huts and a small dairy). Since April 2021, the company Tradície Kysúc s.r.o. has been working on the project with the support of the regional center in the field of social policy – construction of a sheep’s milk processing plant and production of traditional sheep’s milk products. The new mini-dairy combined the idea of creating one high-quality place for processing and at the same time employing part of the region’s disadvantaged residents. Employees work in conditions that meet strict production hygiene requirements. The heart of the operation is the equipment of the Plevnik company (Cheese kettles SKH 500 EW Professional, Prepress PRP-R 120, Cheese cutting device RS 400, Cabinet for fermentation OZF 700), which they have learned to operate very quickly and efficiently: We are really satisfied with Plevnik machines. They make work easier and are simple to clean. We are looking forward to the next cooperation.”

They process a volume of 500 liters of milk per day. Due to the great interest in their products, they decided to increase production by purchasing milk from more distant regions. Customers are local residents and tourists coming here for the beauty of nature in summer and winter. Products are sold in a store near the cheese factory and at contractual partners. From the store, customers can see the production premises and the cheese ripening chamber. They can see that the manufacturer’s credo “contact with customers, quality regionality, closeness to nature, and sustainability” is not just words.
