Syráreň Polun is a small family sheep farm situated above the village of Čremošné, in a quiet and unspoilt mountain setting in western Slovakia. The farm breeds around 360 sheep of the Cigaja and Lacaune breeds, raised on organically managed pastures and meadows surrounding the farm. In winter, the flock is fed hay grown on the farm’s own 140 hectares of permanent grassland — a commitment to self-sufficiency that goes hand in hand with their uncompromising approach to quality.
In 2019, the farm launched a modern on-site dairy, where they process an average of 40,000 litres of sheep’s milk per year. Thanks to the exceptional health status of their animals, the cleanliness of the environment, and the quality of their feed, the milk meets production standards that allow the farm to produce from raw, unpasteurised milk — a quality verified by regular veterinary inspections and ongoing testing of both milk samples and finished products.
At the heart of the dairy is the Plevnik cheese kettle SKH 300 EL PRO with a 300-litre capacity, complemented by a Plevnik pneumatic press. Together, these form the backbone of a balanced and efficient production process. In peak season, a single batch of 300 litres yields 17 loaves of ripening cheese, each weighing approximately 2.5 kg. As the owners put it: “Traditional production methods and modern technologies are a guarantee of quality.”
